Digestive Cheesecake with Dark Choc Glaze

Tasha and I were inspired by tasha's birthday cake which was very satisfying...we got the recipe from diana's dessert...well it was supposed to be oreo cheesecake but we kinda bought all the ingredients at the very last minute, thus cant find any oreo at Londis...so we used digestive biscuits instead..so here's the recipe

Crust:

2 cups cookie crumbs
2 tspn butter, melted
1/4 cup of brown sugar(we used granulated sugar instead)
* 1tspn ground cinnamon (since we didnt like cinamon, we didnt use it)

mixed all ingredients and firmly press the mixture evenly into bottom a cake tin. bake at 180 degree celcius and set aside.
Filling

4 packs(800 gram) of soft cheese
1 1/4 granulated sugar
1/3 cup of heavy cream
2 tbspn al purpose flour
1 1/2 tspn vanilla extract
4 eggs
1 1/2 cups digestive, crushed into pieces

Beat cream at medium speed until smooth. Gradually add 1 1/4 cups of sugar, beating well.
Add heavy cream, vanilla and flour; beat well. Add eggs, one at a time, beating after each addition. Pour 1/3 batter into prepared tin. Topped with crushed cookies and pur in remaining batter. baked in 180 degree celcius for 45 minutes.


Sour cream layer
450ml sour cream
1/4 granulated sugar
1 tspn vanilla extract

Combine all ingredients and spread evenly on the baked cake. baked at 180 degree celcius for about 7 minutes. turn off the oven and leave in the oven for 30 minutes. Remove the cheesecake and let it cool on wire rack


Chocolate glaze

1 cup heavy cream
1 1/2 cup semisweet choc chips(we substitute with dark choc cuz thats what we have at that time...=p)
1 tspn vanilla extract

Combine heavy cream and choc chips in saucepan; stir over low heat until the choc melted. Stir in vanilla. Pour mixture over cheescake while still warm. Refrigerate for at least 5 hours before serving. You can decorate the cake beforehand and served chilled..
